I personally tested the recipe on some thick cut pork chops and my guests were pleasantly surprised by the flavor difference. It wasn’t a matter of whether it lost any salt flavor but it genuinely became a quality flavor of its own and the omission of salt isn’t even a factor.
It’s simply its own taste and surprisingly it was a high quality flavor you’d never guess was missing a key element for grilling such as salt.
